Filipino Garlic Butter Shrimp

I am a person who thinks indulging in the pleasure of food is a delightful experience. Among my many culinary loves, seafood holds a special place in my heart. However, there are certain foods that captivate my taste buds more than others, and one such creation is shrimp.  While some days call for elaborate culinary adventures, most days I find solace in the simplicity of this Filipino Style Garlic Butter Shrimp recipe.

Now, let me share the secret ingredient that elevates this dish to new heights of flavor: lemon soda. Personally, I prefer using regular Sprite, but you can also opt for 7-Up or other similar varieties. Just remember, it’s crucial to choose the regular version and not the diet variant. The sugar content in the soda works wonders, imparting a beautiful caramelization to the shrimp. Brace yourself as the sauce accompanying this dish takes it to a whole new level, earning it the title of “the bomb.”

While savoring this dish, I find great joy in combining the rich sauce with a bed of steaming rice. With each bite, I relish the sublime combination of the sweet umami notes from the shrimp and the invigorating tang of vinegar. While a dipping sauce isn’t a necessity, personally, I highly recommend embracing the vibrant zing of vinegar to take your experience to the next level.

Ingredients

  • 1 pound (450g) head-on shrimp

  • 1 head garlic, minced

  • 1/2 cup sprite

  • 3 tablespoons butter

  • Salt and pepper to taste

Directions

  • In a large skillet, melt the butter over medium heat. Allow it to bubble and foam slightly.
  • Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant and slightly golden. Make sure not to burn the garlic.
  • Increase the heat to medium-high and carefully add the head-on shrimp to the skillet. Cook the shrimp for 4-5 minutes per side until they turn pink and the shells become slightly charred. Stir occasionally to ensure even cooking.
  • Once the shrimp are cooked, pour in the sprite. It will sizzle and bubble up. Stir the shrimp and sprite together, allowing them to cook for an additional 2-3 minutes.
  • Season the shrimp with salt and pepper to taste. Adjust the seasoning according to your preference.
  • Continue to cook the shrimp in the garlic butter and sprite mixture for another 1-2 minutes, or until the sauce slightly thickens and coats the shrimp.
  • Remove the skillet from the heat and transfer the garlic butter shrimp to a serving dish.
  • Garnish with fresh parsley or chopped green onions, if desired.
  • Serve the Garlic Butter Shrimp with Sprite immediately as a main dish or as a delicious appetizer.
