Ingredients

  • 8-10 bone-in chicken thighs

  • 3/4 cup soy sauce

  • 1 1/4 cups cane vinegar

  • 1 head garlic, crushed

  • 3 bay leaves

  • 1 teaspoon whole peppercorns

  • 1 tablespoon avocado oil

Directions

  • In a large pot, combine the chicken thighs, 3/4 cup soy sauce, and crushed garlic. Bring to a boil over medium heat. Once boiling, add the bay leaves, reduce the heat to a simmer and cook for about 20 minutes, or until the chicken is almost fork-tender.
  • Add the cane vinegar to the pot, but avoid stirring the mixture in between as it will take the vinegar longer to cook and you will end up with a sharp vinegar flavor. Allow it to come to a boil and then continue simmering for an additional 7 minutes, or until the chicken is fork-tender and cooked through.
  • While the chicken is simmering, heat 1 tablespoon of avocado oil in a separate frying pan over medium-high heat. Fry the chicken thighs until they turn golden brown and develop a crispy outer layer.
  • As the chicken fries, let the sauce in the pot continue to boil and reduce without covering it. This will help the sauce thicken and intensify in flavor.
  • Once the chicken is fried to perfection, return it to the pot with the sauce. Gently mix everything together to coat the chicken evenly with the flavorful sauce.
  • Serve the warm and savory Chicken Adobo on top of a generous portion of steamed rice. Enjoy this classic Filipino dish with a perfect balance of sweet, salty, and tangy flavors.
